Here’s a recipe to commemorate a great Aussie pastime – the BBQ…

This marinade is ideal for steak, chicken or tofu, and can be pan-fried (indoors) as well as grilled on a BBQ.

Marsala Marinade Magic


Steak fillets, chicken fillets or 500g sliced tofu
1/2 cup Marsala Wine
1/4 cup Soy Sauce
1/4 cup water
2 tablespoons Maple Syrup
2 tablespoons Olive Oil
1 tablespoon minced garlic
1 tablespoon Dijon Mustard
1 teaspoon dried thyme


1. Arrange fillets or tofu slices in a deep dish.
3. Whisk remaining ingredients together and pour over fillets.
4. Leave to marinate overnight.
5. Cook fillets/slices on a BBQ plate, pouring remaining marinade over them towards the end of the cooking process. The marinade will caramelise a little with heating.
