Rich Strawberry Crepes

If you’re a lover of strawberries then this beautifully rich dessert will be on the menu, night after night, after night! I must confess I use a pancake mix for the crepes, but I use this recipe for the sauce and it’s a favourite at each and every one of my dinners with friends.

Rich Strawberry Crepes

Ingredients

4 punnets strawberries
2 teaspoons butter
1 cup sugar
1 teaspoon lemon juice
4 tablespoons Grand Marnier
1/2 cup brandy
1 cup orange juice

Method

1. Make crepes.
2. Put 1 punnet of strawberries aside for decorating plates.
3. Cut 3 punnets of strawberries into halves.
4. Melt butter in a large pan.
5. Add sugar.
6. Trickle lemon juice over sugar-butter mix while stirring.
7. Remove from heat.
8. Add Grand Marnier, brandy and orange juice.
9. Stir until sugar is dissolved.
10. Bring to boil.
11. Reduce heat and simmer until liquid is reduced by half.
12. Remove from heat.
13. Add halved strawberries and stir gently.
14. Using tongs or a spoon, gently remove strawberries from sauce and place in the middle of the crepes – dividing the amount evenly between the number of crepes.
15. Fold the crepes over.
16. Place crepes on the serving plate/platter and trickle sauce over each crepe.
17. Decorate with the remaining punnet of strawberries and a scoop of icecream.
